There’s something very comforting about a big bowl of casserole. It seems to have the taste and feel of home cooking and brings with it memories of dining at grandmas.
Casseroles and baked goods are so easy to make because they’re usually a one-pot wonder that you can throw in the oven and forget about (for about an hour at least). Chunky chunks of veggies, maybe pasta, vegan cheese, and some sort of protein combine to make a comforting meal that’s just perfect for a Sunday lunch or midweek dinner.
The casseroles are great for using up stubborn veggies and can last all week if you make enough! Leftover casseroles and pastries are best.
