This is the original bare minimum dinner at my house – and one of two dinners that my husband feels quite confident about. Sure, I’ve grilled or even fried fish for the tacos, but frozen fish fingers are a great alternative. To quickly reheat the tortillas, wrap them in a damp kitchen towel, place the package on a plate and microwave on high power for 60 to 90 seconds. Don’t like (or don’t have) sauerkraut? Saute it and add another tablespoon of vinegar to the cabbage.
