Make extra crispy fried chicken seasoned to perfection



When it comes to fried chicken, it has to have that crunch. Extra crispy fried chicken is what everyone aims for, but can’t always achieve. In this episode of In The Know: Recipe Remix, celebrity TikTok chef Shihan Chowdhury (@chilipeppercooks) makes your dreams of extra crispy fried chicken come true with his perfectly seasoned recipe that gives you crunch in every bite.

  1. Start with the chicken marinade. Combine buttermilk, garlic powder, onion powder, chili powder, paprika, salt and Thai chilies in a bowl. Once mixed, add the egg whites to the marinade.

  1. Place the chicken in the marinade and let rest in the refrigerator for 12 to 24 hours.

  1. To make the dry dough, combine potato starch, rice flour, corn flour, onion powder, garlic powder and salt in a bowl.

  1. Once it’s been over 12 hours, take your chicken out of the fridge.

  1. Coat your marinated chicken in the dry batter by removing it from the bowl of marinade and gently tossing it into the bowl of dry batter. Shihan wears gloves to avoid contamination.

  1. Prepare your post-seasoning mixture by combining the cane sugar, onion powder, salt, garlic powder, and paprika in a small bowl, and set aside.

  1. Slowly submerge your chicken in the oil (350 degrees Fahrenheit) and fry for 10-12 minutes. Once the chicken is nicely browned, remove it.

  1. Turn up the heat so the oil temperature reaches 375 degrees Fahrenheit and return the chicken to it for another 3-5 minutes.

  2. As soon as you remove the chicken, add the post-seasoning to it so the flavor can meld into the skin of the chicken. Do this on both sides of your chicken pieces. Now all that’s left to do is take a bite and listen to the satisfying crunch!
