This fusion snack, made with cabbage, onions, chickpea flour and spices, will go well with any drink you choose – whether hot or cold. Crispy and fried pakoras are also very easy to prepare.

1/2 purple or green cabbage
1 onion
1/2 cup gram of flour
1/2 cup rice flour
3 tablespoons of corn flour
1/2 teaspoon of turmeric
1 teaspoon of chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
Salt to taste
frying oil

Grate and chop the cabbage
Cut the onion into small pieces
In another bowl, combine the powdered ingredients (turmeric, chili powder, cumin powder, garam masala and salt)
Add this mixture of spices to the cabbage and onions
Mix well by hand (wear a glove for good measure)
Wring out the excess water from the cabbage and onions
Mix in the gram, rice and corn flour
Add this to the cabbage and onion
Mix well to make sure the vegetables are well coated with the flour
Bring it to a thick paste consistency
Heat enough oil to fry it in a pan
When the oil is hot enough to splash, scoop out small balls of the kale-flour mixture from the dough.
Place them in the oil (beware of splashing)
Fry the balls, stirring occasionally
Keep the flame on medium heat while frying
Once they are golden brown, take them out and drain the excess oil using paper tissues.
Enjoy the crispy donuts with a chutney or dip
