REAL ESTATE | Gary’s Place will offer traditional American cuisine

Executive chef Lou Henschel of Cedarburg runs the kitchen at Gary’s Place, 110 Wisconsin Street, better known for its day as The Binkery. Henschel provides that gentle skill set and promises that everything you order will be presented with the care of a house recipe that spans generations of the Henschel family tree. “We’re going to have an all-American menu,” Henschel said. “We’re going to have macaroni and cheese, pizza, wraps, paninis, burgers, really good burgers, Reubens…lots of different things.”

Henschel’s signature dish is salmon and salsa.

“It’s one of my favorite fish,” he said. ” Stove. I like to make lots of different salsas, even a pineapple, jalapeno with strawberries and watermelon and put that on my salmon.

Henschel offers another salmon with mosquito seasoning and sears it really well almost black and does it with a roasted corn and black bean salsa, and some kind of Mexican rice.

Self-taught in the kitchen, Henschel credits his mother for sparking his interest.

“I was the youngest of five children. I was too young to go to work in the fields, so I stayed home and peeled potatoes and apples. I even rolled a dough pie and I had a lot of fun with it,” he said.

Growing up in Green Lake, WI, home economics class in high school was one of Henschel’s favorites. “We had to make a lemon meringue pie. I got an ‘A’ from Mrs. Brightman,” he said, describing the fluffy white peaks and golden brown of the meringue.

“I was super happy and after I graduated they needed someone to work the weekends at the Lantern Supper Club in Markesan, WI where my mom worked as a cook. gave me a full time job.

From age 18 to 68, Henschel honed his craft at restaurants across the state, including restaurants in Rhinelander, Cable and Hayward, Jack Pandl’s Inn in Whitefish Bay and the Boulevard Inn in downtown Milwaukee.

“I come from a varied background where I’ve done just about anything,” Henschel said. “I like having my hands in everything in the kitchen. I just try to teach and make sure every plate comes out consistently.

” This is the main ; consistency, portion size, all that. So people are going to say well, that was really good. I’ll be back.

In addition to the wonderful menu, Gary’s Place will also offer 32 lines of Tap Beer, including a dozen from independent breweries in the area.

Owner Gary Bacon has worked diligently behind the scenes to bring the restaurant to the next level. “I was here in Binkery days,” he said, acknowledging his longevity.

Asked about the direction and theme of the restaurant, Bacon said he still has fond memories of his grandmother and her apple pie.

“She made a lot of comfort food and I want people to come here and feel comfortable,” he said.

Bacon added his own style to the restaurant, replacing the black paint and chandeliers with a more casual vibe. “We installed new flooring upstairs, updated the outdoor patio and I think the menu and the cozy atmosphere is what will draw people in,” he said.

Tim Biloff is the General Manager of Gary’s Place. Well known in the Cedarburg area, Biloff says he sees the potential.

“We’ll have great food and great service,” he said. “Consistency is going to be our key and people will come back.”
