Ree Drummond’s spicy scallop stir-fry is the perfect weeknight dinner


Ree Drummond whips up an easy seafood stir-fry that’s ready in just 15 minutes. The pioneer woman star has an easy way to cook scallops perfectly and pair them with fresh veggies and a savory sauce.

Ree Drummond’s Spicy Scallop Stir Fry recipe is ready in minutes

Drummond demonstrated how to make his spicy scallop stir-fry recipe on an episode of The pioneer woman dedicated to quick seafood dishes.

“I’ve traveled the oceans far and wide and shared quick seafood recipes and can’t finish without a stir fry,” she said on the show.

Drummond first seared the scallops in a skillet with hot peanut oil, then removed them. “Stir-fries, by their very nature, are quick and I’m going to step mine up a bit and do a spicy stir-fry with scallops,” she explained. “The scallops are a little tricky, so I want to sear them, then prep all the other ingredients before adding them.

She added: “Otherwise they would run the risk of collapsing.”

The Food Network host added diced yellow squash, canned baby corn, broccoli florets, snow peas and Thai chili to the skillet. While the vegetables were cooking, she made an easy sauce.

Drummond uses the same basic sauce for many dishes

To make the sauce, Drummond mixed soy sauce, rice vinegar, brown sugar, sriracha, cornstarch and fresh ginger. “It’s the stir-fry sauce I use for so many different dishes,” she explained. “And I love cooking that way. Just sort of having basic recipes for really easy meals that you can change up with different ingredients.

She poured the sauce over the vegetables and added water to dilute the sauce. “And then you won’t believe how quickly it all comes together,” Drummond said.

She turned off the heat and added the scallops to the pan. “The scallops are quite delicate, so I’m just going to fold them very gently so they get a light coating of sauce,” The pioneer woman star explained.

To serve the stir-fry, Drummond laid it on a bed of jasmine rice, then garnished it with cilantro leaves and sliced ​​green onions.
