Vegan baked sweet potato flautas with cashew queso

The key to getting crispy flautas in this recipe from Mexican plant-based cookbook is to reheat the tortillas before filling them, a preheated oven, and a generous brushing of oil.

What do you need:

For the flutes:
1 ½ pound sweet potato (1 large or 2 small), peeled and cut into ½ inch thick pieces
1 tbsp plus ½ tsp salt, divided
1 tablespoon of lime juice
12 corn tortillas (6 inches)
2 tablespoons of avocado oil

For the cashew queso:
2 tablespoons of avocado oil
¾ cup of raw cashews
cup of hot water
2 tablespoons of lime juice
1 can (4 ounces) diced green peppers, with juice
¼ cup nutritional yeast
½ teaspoon smoked paprika
2½ teaspoons of salt

What do you do:

  1. For the flautas, preheat the oven to 450 degrees. Place an oven rack on top of the oven.
  2. In a saucepan about three-quarters full of water, add a tablespoon of salt. Bring to a boil over medium-high heat. Reduce the heat and simmer until the sweet potatoes are tender, but do not fall apart. Drain and let dry for a few minutes in a colander.
  3. Return to saucepan with remaining salt and lime juice. Mash with a potato masher until smooth.
  4. In a cast iron skillet over medium heat, heat the pan for at least 3 minutes, or until hot but not steaming. Reheat tortillas one at a time until tender and supple, but not toasted. Keep warm in a clean tea towel or tortilla warmer.
  5. Place about 2 tablespoons of the sweet potato filling on one edge of each tortilla and roll to seal. Repeat with the other ingredients.
  6. Grease a baking sheet with cooking spray. Place the flautas, seam side down, on a baking sheet and generously brush the tops with avocado oil. Bake until crispy and toasted, about 20 minutes.
  7. For the queso, in a large skillet over medium heat, heat the oil. Add the cashews and fry, stirring occasionally, until the nuts are truly toasted. Transfer to a blender with the rest of the ingredients and blend until smooth. Return to the pan and heat until just lukewarm.
  8. Serve the flautas hot with the queso.
