Hello. Happy Halloween. I’m not too keen on scary high jinks, let alone candy corn or miniature milky ways, but this afternoon I’ll be putting on my mask to hand out Snickers Dinosaurs and Ted Lassos bars all the same, before a dinner party. hot – shrimp sauce (above), dirty rice, braised greens and cornbread. We’ll have the last of the holiday candy for dessert, clean up and watch “Succession”.
As for the rest of the week, I’d like to start with this vegan pan-seared tofu tantanmen for Monday dinner. While this is great as is, I’m not a vegan myself, so I’m going to use some chicken broth to make it and add a jammy boiled egg to the bowl at the end. It’s a good meal, especially with a big dollop of crispy chili or XO sauce added to the table.
For the Tuesday meal: farro and Parma cauliflower, crunchy and delicious, with an iceberg salad dressed in halves of cherry tomatoes marinated in red wine vinegar, olive oil, salt and lemon pepper. I love this salad.
Wednesday night, I think, could be really good for this mushroom wafu pasta, topped with grated nori. But I wouldn’t look aside at college tacos if that’s what pops your drums, or a quick spaghetti bolognese.
For Thursday, take a look at this garlic braised chicken, which has an earthy side thanks to the addition of a good amount of white pepper. Reheat bread to accompany if you can.
And then on Friday, you can end the week with a cook’s choice: either this crispy salmon with mixed seeds (the yogurt helps bind them to the fish) with a herb salad; or Korean barbecue style meatballs, great with rice and lots of kimchi.

It’s even more specialized, but I recently resurfaced the story of Mount Desert Island in Maine by Samuel Eliot Morison in 1960, “The Story of Mount Desert Island”. He’s not strong on the Wabanaki people whose land it was, but once the healers start to appear, the tale takes off.
Also from the time machine: here is Sarah Vowell in 2007 on “This American Life”, telling the story of a 19th century cartographer named Charles Preuss, who accompanied explorer John Frémont on several expeditions through the American West. He hated almost every minute.
