Hello. They’re getting ready for Thanksgiving in Canada today, bringing birds and peeling potatoes for Monday’s feast, getting the butter pies ready, dripping maple syrup in cranberry sauce, setting tables, indulging in holiday cheer. It’s amazing to think that we’ll be following them in a little over a month.
In the meantime, however, we’re still in the early days of fall agritainment here in the US: getting pumpkins and moms for the front porch or porch; roasting corn; manufacturing apple cider donuts to share with friends after a walk in a labyrinth of sunflowers. I would like to spend the afternoon doing white borscht against the sweet freshness of the air, to eat with soft bread and soft butter. (And if that’s not for you, here’s a good summary of vegetarian soups and stews.)
Monday I like the idea of cauliflower piccata (above). The roasted florets soak up the tangy, buttery sauce, and the addition of chickpeas makes for a hearty vegetarian main course. I will serve it next to pasta, with a parsley salad on the side.
For Tuesday’s meal, take a look at these sesame salmon bowls. There are a lot of elements, but none are particularly difficult. And subscribers seem to love it: “My partner said it was the best thing I ever cooked,” one wrote in a note below the recipe.
Riff on this recipe without a recipe for Salted French toast with cherry tomatoes and basil Wednesday. You can, for example, add mozzarella to the mixture or a fried egg. Or both!
Then on Thursday, turn to these chicharron mushroom tacos, or these Slow cooker pork tacos with hoisin and ginger, or these simple and exquisite avocado tacos that Jeff Gordinier recovered from chef Enrique Olvera.
And Friday ? Vietnamese pork and eggs with caramel in the pressure cooker for me, I think, although I would totally understand if you wanted to stick to the Friday tradition and roast a chicken. If so, plan ahead so you can marinate all Thursday night: this buttermilk roast chicken is just sublime.
