Chef, recipe developer and food stylist Ashton Keefe has shared a classic roast chicken dish that can be adjusted to your favorite flavor profiles with some of his suggestions below the full recipe.

Skillet Chicken

1 to 2 tablespoons extra virgin olive oil

2 teaspoons fine sea salt

1 chicken, 2 to 3 pounds, broken into 4 pieces, 2 legs and 2 breasts

4 crushed garlic cloves

2 shallots, thinly sliced

1 lemon, thinly sliced

2 tablespoons unsalted butter

1 cup dry white wine

1 bunch chives, finely chopped


Preheat the oven to 425 degrees.

Heat the olive oil in a large ovenproof skillet over medium-high heat. Pat the chicken dry with a paper towel and season with salt. Sear chicken skin side down until browned, 4 to 5 minutes. Remove the chicken from the skillet. Remove the pan from the fire.

In the skillet, add the garlic, shallots and lemon. Place the chicken skin side up on the shallot/lemon mixture and add the butter and wine. Place the pan in the oven and bake for an additional 20-25 minutes until the juices run clear and the internal temperature of the chicken is 165 degrees.

Garnish with chives.
