Skillet Chicken

Serves: 4

“I love this recipe. To me, the aroma of roast chicken symbolizes home, family and love,” Keefe said. “What’s even better is that the ingredients can be replaced with shallots, lemon and garlic. Or make it a party and invite all the ingredients – and your friends.”

Ingredients

1 to 2 tablespoons extra virgin olive oil

2 teaspoons fine sea salt

1 chicken, 2 to 3 pounds, broken into 4 pieces, 2 legs and 2 breasts

4 crushed garlic cloves

2 shallots, thinly sliced

1 lemon, thinly sliced

2 tablespoons unsalted butter

1 cup dry white wine

1 bunch chives, finely chopped

directions

Preheat the oven to 425 degrees.

Heat the olive oil in a large ovenproof skillet over medium-high heat. Pat the chicken dry with a paper towel and season with salt. Sear chicken skin side down until browned, 4 to 5 minutes. Remove the chicken from the skillet. Remove the pan from the fire.

In the skillet, add the garlic, shallots and lemon. Place the chicken skin side up on the shallot/lemon mixture and add the butter and wine. Place the pan in the oven and bake for an additional 20-25 minutes until the juices run clear and the internal temperature of the chicken is 165 degrees.

Garnish with chives.
